Palmyra cheese is a very traditional Kingdom-type cheese. The name Palmyra comes from the fact that the production of this type of cheese began in the Mantiqueira mountains, more specifically in the Palmyra region, Minas Gerais state, now Santos Dumont. Produced by Dutch cheesemakers in 1876, as an adaptation of Dutch Edam cheese, Kingdom-type cheese was an immediate success due to its quality, which surpassed the original Dutch version. The most famous commercial brands, Palmyra and Borboleta, maintain the remarkable characteristics that made this type of cheese one of the great national cheeses, such as its traditional tin packaging, which, in addition to protecting the cheese, aids in the maturation process, its red rind, and its maturation period of at least three months, a decisive factor for a peculiar flavor and a very aromatic cheese.
